Almost Sweetopia Sugar Cookie Cutouts

This is based on a sugar cookie recipe that I found through Pinterest (http://sweetopia.net/2009/12/sugar-cookie-recipe/). It is a nice cookie, and I especially like making half batches--just enough for two cookie sheets worth! I made a few modifications and made a few changes to the directions. Prep time includes chill time and cook time is for 4 cookie sheets. (As a side note, I really like the three stages of the recipe--10 minutes to mix, then chill, --10 minutes to cut out, then chill, then bake. With the breaks, I find it easier to fit this recipe into an afternoon playing with my children)

Sugar Thins

These sugar cookies are my husband's favorite comfort food. His mom made them for Christmas every year. I continue the tradition, but I make them for all the other holidays as well. The secret to getting these cookies perfect is to keep the dough cold and roll them very thin.

Slice and Bake Oatmeal Raisin Cookies

Healthy whole wheat adds to the nutritional value and adds a nice nutty flavor. Cookie dough can be frozen up to 3 weeks.

Nut Horns

This is my mother;s recipe. It has to be at least 60 years old. The dough is soft and has to be refrigerated before using, but these are delicious. I can't stop eating them.

Chocolate Fig Truffles

These are very quick and HEALTHY!!! Lots of great fiber and nutrition with a kiss of chocolate coating. I have to make multiple batches to keep them around and I have had the need to hide them! Not to mention that they are quite satiating as well!!

Coffee and Cream Oatmeal Cookies

Classic soft and chewy oatmeal cookies with a hint of coffee and cream. The cream component is white chocolate chips. Who knew?! From Bake Your Day. The original recipe called for all white chocolate chips, I have taken the liberty to use half white and half dark chocolate. If you have a food scale, measure the sugars for accuracy.

High Country Gingersnaps

Gingersnaps were my husband's favorite cookie as a child and I have had a hard time with cookies, living at 7000 feet. I experimented with this recipe and he declared this version a success.

American Kitchen Classic Linzer Sables (Cookies)

Linz, Austria is the home of the renowned Linzertorte (cake). A Linzertorte is a tart made of a nut flour dough accentuated by almonds, lemon zest, and cinnamon. The tart is traditionally filled with black currant preserves and topped with a lattice crust. Linzertortes are a traditional European Christmas pastry. The Linzertorte is one of the oldest known tarts dating from 1653. It was introduced to America around 1856. Linzer Sables employ the same recipe as the Linzertorte but instead the dough is cut into cookies and two of them form a sandwich around the preserves. The top cookie has a small cutout in its center (known as a Linzer eye), thus showing off the underlying jam. In America, raspberry has replaced black currant as the jam of choice though any fruit preserve, jam, jelly or conserve can be used to fill Linzer Sables.
