Demonstrated at this years Mobile World Congress in Barcelona the Nokia PureView 808 reportedly boasts a 41-megapixel sensor , runs on a Symbian OS and uses Carl Zeiss optics and Nokia-developed pixel over-sampling technology. Other specs include a single core 1.3 GHz CPU, a 4-inch, 360 x 640 pixel screen, 512 MB of RAM and 16 GB of storage. Read more about this here and here.
A Swedish company has developed an eye-controlled computer technology called the "Tobii Gaze" which could spell the end of the traditional mouse and could have applications for digital imaging. The technology will be demonstrated on windows 8 at this years International Consumer Electronics Show in Las Vegas. You can read more about this here.
In an interesting development Sony has recently come out with the DEV-5 Digital Recording Binoculars which allows one to zoom 20x in High Definition and record in either 2D or 3D with GPS tagging. More specs can be found here and here.
Also known as fake miniature photography is the art of turning photographs of real life objects/landscapes into miniature scale models. A couple of video examples can be found here and here. There are various tutorials you can find online. If you can't do it yourself in imaging software you might like to try this online service for photographs and this one for videos.
Recently I was looking for a rugged and compact digital camera and came across the Pentax Optio WG-1 GPS. It boasts the ability to be water proof down to 33 feet/10 meters, shock proof to falls of five feet/1.5 meters, cold proof down to 14 degrees Fahrenheit/-9.5 degrees Celsius and crush proof up to 220 pounds/100 kg. Recently the internet has been a buzz with examples of time lapse photography and here is one such example and another good one can be found here. From a completely different perspective here is one from the International Space Station. For those of you who want to create your own time lapse video this tutorial is a good place to start.

The first serious 3D smart phone is here. The technology has been around since the early 2000's but for a variety of reasons never caught on. This however, looks to change with the launch of LG 3D Smart Phone at the MWC 2011 in Barcelona. The phone is expected to be available to consumers in April this year.

Taken from the SDSS imaging camera a reported 1.2 trillion pixel image is available for public download. The image covers a third of the night sky and is part of an on going project to map the structure and dynamics of the Milky Way. More information can be found here.
